These crostini are deceptively simple. And they don't look like much. But DANG are they cool.
I mean, really. Let's think about this for a minute. These crostini have bread. They have cheese. They have roasted garlic. If you're non-lazy enough to remember to pick up some wine to drink with them (unlike me, who is all kinds of "the liquor store is too far away" lazy) then they have wine. That's basically every food group worth caring about all rolled up into one. You catch my drift?
Now, first of all, I am not the world's biggest brie fan. I'm not sure why. I don't DISLIKE it, but I never crave it. My mom loves brie (HI, MOM) and so does Kyle (HEY, KYLE) but for some reason I very seldom hop on the brie train. Except today. Today, for whatever reason, I saw a slice of brie at the store and thought, "YES. THIS IS WHAT I WANT TO EAT."
And eat it I did. And it was super duper delish.
PS - this recipe lists very "loose" quantities, meaning you should adjust depending on your personal tastes. I went light-ish on the cheese and heavy-ish on the garlic, but if you're a brie-aholic, use a bit extra! Crostini are fun because they're easy to play around with while you're figuring out exactly which combination suits your palate best.

Roasted Garlic and Brie Crostini

Description
These easy crostini pack a flavorful punch with roasted garlic and creamy brie cheese.
Ingredients
- 1 head garlic
- 8 oz. brie cheese (or more, if you like things extra cheesy!)
- 1 french baguette, sliced
- 2 Tbsp. extra virgin olive oil
- salt and pepper to taste
- (optional) chopped parsley, for garnish
Instructions
- Cut the root off the garlic to expose the cloves. Drizzle with olive oil and sprinkle with salt and pepper, then wrap tightly with foil and roast at 375 for about 45 minutes. Remove from oven and set aside.
- Spread baguette slices out on a baking sheet. Drizzle with olive oil. Bake at 375 for 5-6 minutes until lightly browned. Remove from oven.
- Unwrap garlic and pull out roasted cloves with a knife or small fork. Roasted garlic is soft, and spreads very easily. Spread a bit of roasted garlic (use however much you want!) over each piece of toasted bread.
- Top each crostini with a thick slice of brie. Place baking sheet back in the 375 degree oven for 5 minutes, until the cheese melts.
- Remove crostini from oven and top with parsley garnish (optional, but it adds a nice bit of color). Serve immediately.
