We're building a simple goat cheese crostini here and topping it with an easy, bruschetta inspired strawberry mix.
Ingredients you'll need
- Sliced bread - Use a baguette for smaller bites (perfect for a crowd!) or grab a crusty bread loaf if you'd like larger portions. You'll also need a splash of olive oil to toast the crostini bread with our oven-baked method!
- Goat cheese - Let it come to room temperature on the counter for 15-30 minutes before assembling to make it easier to spread!
- Strawberries - Fresh, in-season strawberries (locally-sourced, if you can find them!) are what really make this crostini recipe.
- Fresh basil - For just a hint of depth and earthiness.
- Balsamic Vinegar - A small splash of balsamic gives our strawberry mixture a bit of zing (but you can skip this if you prefer!)

Ingredients

- 2 teaspoons balsamic vinegar
- 6 ounces goat cheese
- ¼ cup honey
Instructions
- Set the goat cheese on the counter while you prep the rest of the ingredients – this will give it a chance to soften so it’s easier to spread when you’re ready to assemble your crostini!
- Lay baguette slices in a single layer on a baking sheet. Drizzle with olive oil and bake at 375° Fahrenheit for 5-7 minutes or until lightly browned.
- While bread is toasting, prep the strawberry topping. Combine diced strawberries, chopped basil, a pinch of salt, and balsamic vinegar in a small mixing bowl and stir to combine. Set aside.
- When your bread slices are toasted, it’s time to assemble! Spread each crostini piece with a layer of goat cheese, then top with a spoonful of the strawberry mixture. Finish with a light drizzle of honey and serve immediately.

Swaps and substitutions. Finish these crostini with a drizzle of balsamic glaze instead of honey if you like. Use blackberries, raspberries, peaches, or pears instead of strawberries. Use mint instead of basil for a fresh twist.
