Hit all sides of the short ribs with plenty of kosher salt!

Set short ribs aside and sauté some onion and garlic in the Instant Pot bowl
Add baby portobello mushrooms and a dollop of tomato paste.
Add a splash of balsamic vinegar and some hearty red wine to deglaze the pot.
Bring the sauce to a simmer, turn off the sauté function, and return short ribs to sauce.
Lock the Instant Pot lid in place, set valve to "sealing," and cook for 50 minutes at high pressure. Let pressure naturally release for 15 minutes, then quick release remaining pressure.
Stir a cornstarch slurry into the sauce; sauté again until sauce thickens to a gravy consistency.
Spoon some gravy over each short rib and serve with mashed potatoes, pasta, roasted veggies, and more!
