These cocktails are made with a homemade blueberry simple syrup: just a few ingredients and 20 minutes is all you need! We love using homemade syrups to elevate our mocktails and cocktails, like these Strawberry Thyme Cocktails and Triple Berry Margaritas.
Ingredients You’ll Need
- Blueberries - Making a blueberry simple syrup is a great way to use those juicy fresh blueberries during blueberry season, but you can use frozen berries if they're out of season! You can also use strawberries, blackberries, peaches, or other seasonal fruit.
- Sugar - To sweeten the deal.
- Whiskey - Grab your favorite whiskey or bourbon for this cocktail. If you're not a fan of dark liquor, gin and vodka are also great options. For a mocktail, omit the liquor or swap your favorite nonalcoholic spirit (we love this gin alternative from Drink Monday!)
- Lemon juice - Adds some acidity to balance out the sweetness.
- Soda water - To put the fizz in this spritzer.
Our Basic Order of Operations
Simple syrup is made by simmering a 1:1 ratio of sugar and water until the sugar dissolves, leaving a smooth, sweet syrup. Adding fresh blueberries to the mix gives us a blueberry flavored sweetener with a gorgeous deep magenta color. You can also use this syrup for salad dressings, smoothies, and other drinks!
Make the blueberry syrup:
- Stir sugar, water, and blueberries together in a saucepan. Cook until sugar has dissolved and berries are soft.
- Let cool then strain out the syrup. (Save the leftover berries for smoothies!)
- Use immediately or cool completely and store in an airtight container in the fridge.
Make the cocktails:
- Add ice to four cocktail glasses.
- Combine whiskey, lemon juice, and blueberry simple syrup with a handful of ice in a shaker and give it a good shake.
- Strain evenly into the glasses.
- Top with a splash of club soda and garnish with lemon wedges, blueberries, or fresh mint.

FOR THE COCKTAILS:
- 4 ounces (½ cup) whiskey
- 4 ounces (½ cup) blueberry syrup
- 2 ounces (¼ cup) lemon juice
- 4 ounces (½ cup) club soda
- Plenty of ice cubes
Instructions
FOR THE BLUEBERRY SYRUP:
- Combine sugar, water, and blueberries in a small saucepan over medium heat. Bring mixture to a low simmer and cook, stirring occasionally, until sugar has dissolved and blueberries have softened.
- Remove saucepan from heat and let cool for 10-15 minutes.
- Strain syrup into a separate bowl to remove the blueberries and set syrup aside. Save the berries for smoothies!
FOR THE COCKTAILS:
- Add a few ice cubes to four cocktail glasses.
- In a large shaker, combine whiskey, blueberry simple syrup, and lemon juice. Add a handful of ice and shake to chill.
- Strain drinks evenly between your four cocktail glasses of ice.
- Top each cocktail with a splash of club soda and serve immediately.
Notes
Substitutions and Additions. Increase or decrease the amount of blueberry syrup in these cocktails to adjust the sweetness. Muddle some fresh basil, mint, or rosemary into the cocktail shaker before mixing for a subtle, earthy flavor. Garnish these cocktails with fresh blueberries, a slice of lemon, or a sprig of mint if you like. Use champagne or tonic water in place of club soda. Use vodka or gin in place of whiskey if you like.
